Gingered Salmon Fillets with Wasabi Soy Dipping Sauce

This marinade is good on almost any fish and takes just a few seconds to whisk together.  I created it one night when I was testing the VacuVin Instant Marinater.  The Marinater literally forced the flavor into the fish in only five minutes and the lemon zest tasted fresh, sparkling and bright—as if I just zested it—even  after grilling for 20 minutes.

Ingredients

1 tablespoon dark brown sugar 2 cloves garlic, minced 1 teaspoon kosher salt

4 2 inch thick Salmon fillets (cut from center piece of salmon fillet)

Olive Oil

Fresh Ground Pepper

1 tablespoon Wasabi powder

1 tablespoon fresh grated ginger

Zest and Juice of one orange

Methods/steps

Grilling Method: Direct/Medium Heat

Combine sugar, garlic, ginger and salt to make a rub. Set aside. Coat fish with olive oil and rub liberally with spice mixture. Let sit for 10 minutes, meanwhile make the dipping sauce by combining all three ingredients and mix well. Set aside. Place fish skin side down over Direct Medium heat and grill for 10 minutes or until medium in the center. Remove from grill and serve with Wasabi Soy Dipping Sauce.
