Grilled Fruit Kabobs

Prepare these in advance, or set out cut fruit in bowls along with some skewers and encourage guests to assemble their own kabobs.

Grilled Fruit Kabobs

Serving Size - 4 people

Ingredients

Select some or all of the following fresh fruits: 1/2 pineapple, rind and core discarded, cut into 1-inch cubes 1 mango, skin and pit discarded, cut into 1-inch cubes 1 peach, skin on, pitted, cut into 1-inch pieces 1 banana, peel on, cut into 1/2-inch slices 8 strawberries, stems removed 8 seedless grapes (whole) 1/4 cup granulated sugar 2 tablespoons peanut or olive oil (To coat grill and prevent stickage) 1 pint coconut ice cream (optional) 4 bamboo or metal skewers

Instructions

Skewer fruit and sprinkle generously with sugar.

Rub down grill grate with a rag dipped in the oil. Then grill kabobs for 8 minutes directly over hot coals, rotating 1/4 turn every 2 minutes or so, or until fruit starts to caramelize and brown slightly. Serve as is or over ice cream.
