Carolina Dog Smothered in Red BBQ Slaw
Ingredients
1 medium green cabbage, chopped 1 recipe Red BBQ Sauce (see below)
Red BBQ Sauce:
- 1 cups cider vinegar
- 1 tablespoon kosher salt
- 1 teaspoon ground white pepper
- ½ tablespoon red pepper flakes (the more flakes, the hotter the sauce*)
- 3 tablespoons white sugar
- ¼ cup brown sugar
- ½ teaspoon black pepper
- ½ cup ketchup
- 8 hot dogs, boiled or steamed
- 8 hot dog buns
Methods/steps
Mix all sauce ingredients together and let sit at least 10 minutes or almost indefinitely in the refrigerator. (*Note, the longer the sauce sits, the hotter it gets since the heat from the red pepper flakes is brought out by the vinegar. Start with ½ tablespoon red pepper flakes and then add more to taste if desired.)
Mix sauce and chopped cabbage together until well mixed and not quite wet. Refrigerate. Let sit 2 hours or overnight.
When ready to serve, place hot Hot Dog in bun and smother with the red slaw. Serve immediately and watch the smiles appear!
Note: As hard as it is for The Girls to stomach, this is one time that we have to say, choose water over fire! And, you may certainly substitute gourmet dogs, sausages and the kind and even grill them—but beware, you will lose the simple pleasures of a plain steamed dog and the crunchy, sweet and tart vinegar slaw. The combination of which must be tried at least once in a lifetime!
