Grill “Fried” Okra

Serving Size – 4 people

Ingredients

24 whole pieces of okra, cleaned and trimmed
Olive oil
Kosher salt
Fine yellow cornmeal, about ½ cup
Bamboo skewers, soaked in water

Instructions

Grilling Method: Direct/Medium Heat

Lay okra on a cutting board in 4 groups of 6. Line the vegetables up evenly. Thread both sides with a bamboo skewer, so the okra resembles a ladder. You will have 4 skewers with 6 pieces of whole okra.

Brush okra all over with olive oil. Sprinkle with salt. Spread the cornmeal out on a piece of waxed paper or a flat plate. Dust both sides of each skewer with cornmeal. Shake off excess.

Place the skewers directly on the cooking grate and grill about 5 minutes per side or until crisp and browned all over. Remove from grill and serve immediately with a sprinkle of salt if desired.
